Ingredients:
1 Cup of sugar.
1/4 Cup of water (to use at the beginning).
1/2 Cup of water (to use after achieving caramel color).
1/4 Cup of orange juice without pulp (it could be purchased at the store or freshly squeezed, just make sure to use a strainer to separate the pulp).
Alternatively you could replace the orange juice with lemon or lime juice. Another option would be to use orange, lemon or lime peels instead of juice but these would have to be added after turning the heat off to avoid burning them and it will also require to use an extra 1/4 cup of water to account for the missing 1/4 cup of juice.
This caramel takes about 20 minutes of preparation more or less from beginning to end. It will take you about 13 to 15 minutes to achieve the caramel color and then 3 to 5 minutes of boiling after adding the 1/2 cup of water and orange juice.
