Ingredients:
4 Pounds of goat meat
1/2 cup of orange, lime or lemon juice or vinegar
1 1/2 teaspoons of salt (to season the meat)
1 teaspoon of dry oregano
4 cloves of garlic (chopped)
1 tablespoon of vinegar
1 tablespoon of olive oil (for the meat marinade)
Ground black pepper to taste
2 1/2 ounces of diced ham (your choice of ham, preferably lightly smoked)
1 large diced onion
1 diced bell pepper (any color)
1 large diced tomato
1 tablespoon of capers
About 12 olives (pitted)
2 bay leaves
1/2 cup of red wine
4 cups of liquid (water or broth)
1/2 teaspoon of annatto powder
1 teaspoons of paprika
About 2 tablespoons of olive oil (for the stew)
Salt to taste (to season the stew)
