Ingredients:
1 bar of unsalted butter of 4 oz
2/3 cup sugar
1 teaspoon grated ginger
2 eggs
1 1/2 cups of mashed bananas
1 3/4 cup of all purpose flour
2 1/4 teaspoon of baking powder
1/4 teaspoon of salt
1/2 cup of walnuts or pecans
It is important not to bake pass the perfect point or otherwise the bread will turn out dry and overly crispy. I recommend testing with a wood stick near the center of the bread at around 50 minutes and then at 15 minutes intervals until getting a dry stick.
